Mexican fajita bowl with mango-jalapeno sauce- quick, healthy , colorful and so satisfying. It's the perfect weekday meal and will leave you wanting for more once it's over. It's that good! Think re fried beans, smoky fajita veggies, pickled purple cabbage, chopped mango over a bed of brown rice and then a tangy and spicy mango jalapeno sauce to tie everything together. Sounds delicious right?
Fajita is a grilled meat dish cooked with onion and bell peppers and served on a tortilla as a soft taco. Lettuce, Sour cream, restaurant style salsa, re-fried beans and guacamole are the condiments usually served with fajitas. It's filling and tastes very good.
This buddha bowl has all the amazing flavors of fajita in a bowl. I am a vegetarian so have not used any meat here but you can go ahead and add protein of your choice or even add cottage cheese or tofu. Begin by cooking onion and bell peppers on a hot skillet or pan with fajita seasoning untill slightly charred. Next, like any buddha bowl, cook grain of your choice like rice/brown rice/quinoa/ pearl barley. Next add saucy and garlicky re-fried beans which I recently shared and comes in handy for most of the recipes. For the crunch I have pickled purple cabbage to keep things interesting and make this bowl even more delish.
Star of this bowl is really the amazing and vibrant Mango jalapeno sauce which has sweet flavor from mango, spicy and tangy kick from jalapenos and finally freshness from the cilantro/coriander. Absolute deliciousness! I highly recommend using this sauce as a dip too with potato chips or nacho chips. You'll be hooked. I also added some additional chopped mangoes in the bowl simply because you can never have enough mangoes.
Every bite is saucy, spicy, tangy , crunchy with hint of garlic from re-fried beans. Such an explosion of flavors in mouth! You all know how obsessed I am with Mexican food. Restaurant style salsa, Mango salsa and re-fried beans are staple in my house so we can make tacos, quesadillas anytime for our meals. I can literally have it everyday and this is another delicious but healthy recipe which I can indulge in during weekdays as lunch/dinner. Beaming with rainbow colors and packed with goodness of veggies and brown rice, this bowl is really delicious. High in protein, and fiber packed in the form of veggies and mangoes.

3/4th cup shredded purple cabbage
1/2 cup chopped Mango
4-5 jalapeno slices

Ingredients
Component 1: 1/2 cup raw brown rice
Component 2: 1 chopped mango
Component 3: 1 cup Re-fried beans ( Recipe here)
Component 4: Fajita veggies( veggies like carrot, broccoli, mushrooms can be added too)
2 tsp extra virgin olive oil/ regular cooking oil
1/2 cup sliced onion
1/2 capsicum - sliced
1/2 yellow bell pepper- sliced
1/2 red bell pepper- sliced
1 tsp onion powder
1 tsp garlic powder
1 tsp Mexican seasoning
1 tsp oregano
1 tsp chili flakes
1 tsp lemon juice
Salt to taste
Component 5: Pickled purple cabbage ( can use regular cabbage too)
3/4th cup shredded purple cabbage
2 tsp vinegar
2 tsp sugar
2 tsp water
Component 6 : Mango jalapeno sauce
1/2 cup chopped Mango
4-5 jalapeno slices
1/4th cup coriander
1 tsp lemon juice
1 tsp lemon juice
1 Tbsp water
salt to taste
Method
Begin by pickling purple cabbage by mixing vinegar, sugar and water together and adding purple cabbage in it. Mix and set aside.
Next, start cooking soaked brown rice.
While that is happening, prepare veggies. Heat oil in a pan and saute sliced onions till slightly golden and then add capsicum and bell pepper. Season with salt and cover with a lid for 10 mins on medium heat.
Once peppers are partially cooked, add onion powder, garlic powder, mexican seasoning, oregano, chili flakes and stir to combine on high heat. Turn off gas and mix in lemon juice.
Next prepare re fried beans using canned beans. Recipe here ( You can also soak raw beans and make from scratch).
Finally prepare the sauce by blending chopped mangoes, jalapenos, coriander, lemon juice, water and salt together till you get a puree. Also chop one extra mango for the bowl.
Assembling the bowl
Take serving bowls and add brown rice, re-fried beans, fajita veggies, pickled cabbage and chopped mangoes adjacent to each other.
Drizzle with mango jalapeno sauce. Mix and enjoy!
