I have compiled some pantry-friendly recipes which requires minimum ingredients easily available at home. In times like these, it's important to make use of whatever is already stocked up at home and not waste food at all. I have also mentioned alterations or modifications incase you don't have any particular ingredient. Hope this compilation of recipes helps you all.
This simple Gur ka daliya is delicious and hearty. It's made with just 4 staple ingredients like ghee, broken wheat (daliya), jaggery and cardamom powder. It's nutty, rustic and has right amount of sweetness. It's great for breakfast and for lunch/dinner, pairs really well with moong dal which we marwaris make pretty much every day.

Its the season of mangoes and this recipe is a must try for breakfast! These mango pancakes are made with whole wheat four and taste so delicious with chili lime caramel sauce. This breakfast will be a winner among kids and elders both!

Alterations which can be done:

Substitute regular cheddar with mozarella if you want. Even cheese slice is great since it melts faster.
I have the perfect pizza recipe for you guys which you all can use to make homemade pizza. It uses basic ingredients like flour, olive oil, salt, herbs and yeast. Pizzas made with this dough comes out perfect and absolutely crispy.
Incredibly easy sauce made with tomatoes which comes in handy for making pizzas, pasta, risotto, gnocchi. Made with basic pantry ingredients like butter, olive oil, garlic, onion, tomatoes/canned tomatoes and some seasoning.
Some alterations which can be done in the recipe:
- Add mixed herbs or dried basil if you dont have fresh basil
-Use canned tomatoes if you don't have fresh tomatoes with you.
-Omit olive oil if you don't have.
Matar paneer is one of my favorite all time Indian curry. Soft and moist paneer and peas dunked in tomato-cashew based gravy and seasoned with all of Indian spices. It's so comforting and goes really well with chapatis. You can easily make paneer at home. Just make sure to pack crumbled panner in a mesh cloth tightly and then put under heavy weight for 15 minutes and then you will easily be able to cut panner into cubes.
Alterations which can be done:
-Use ground oats or ground makhana( fox nuts) to thicken the gravy if u dont have cashews or leave it out completely.
- If you don't have peas, add capsicum or leave that out also if u want.
Lemon rice
This lemon rice is probably the best way of using left over rice and apart from rice it only uses some curry leaves, lemon juice, green chili and turmeric. It's incredibly fragrant and goes well just on its own and taste even better with yogurt. It's a complete meal in itself and very filling. You can do the same thing with quinoa too.
Alterations:
-Skip curry leaves and fresh coriander u don't have it handy
Instant stove-top granola
If you have rolled oats or even instant oats lying in your pantry, then this is the recipe you must try and make a batch of it for quarantine breakfast or snack anytime of the day. It uses basic ingredients like oats, honey and any nuts or dried fruits you have on hand. Serve it with fresh/ tetra pack milk or yogurt for breakfast.
Alterations which can be done:
-Substitute coconut oil with any vegetable cooking oil.
-If you don't have honey, add jaggery/palm sugar.
Mexican kidney bean tacos with pico di gallo
Hearty, flavorful, satisfying, spicy and super yummy Mexican bean tacos with pico da gallo. This recipe uses all staple ingredients which will be easily available in your home- kidney beans, onion, tomato, cumin powder, ketchup, mayo(optional).
Ingredients which can be skipped:
- Fresh Coriander
- Substitute lemon juice with chat masala or sumac powder
Egg-less chocolate and walnut brownies
We all can do it with some treat while we all are house locked. This is such a moreish recipe and the best part is that its one bowl. You don't even need an electric beater, just mix everything together with manual whisk or a spoon and batter will be done for baking. Just basic ingredients like flour, sugar, butter, milk, dark chocolate and some baking powder. These brownies are insanely chocolate-y, fudgy and gooey.
Alterations:
- Skip walnuts if you don't have.
Whole wheat apple pie pancakes
This is an easy breakfast recipe which is healthy, delicious and filling. These pancakes are made with whole wheat flour and oats which are high in fiber. Apart from that, it uses other basic ingredients like apple, cinnamon, butter, yogurt and honey which will be easily available in your pantry.
Alterations which can be done:
-Can skip oats if you don't have
Simple kidney bean salad in honey-mustard dressing
This is such a fabulous recipe which so much crunch and flour. It requires all pantry ingredients- Kidney beans, onion, tomato, olive oil, honey, mustard sauce and other basic ingredients. It's quick to make and incredibly flavor. Filling and hearty too!
Alterations which can be done:
-Can substitute kidney beans with black eyed peas or chickpeas.
- Can use only onion and tomato in salad if you don't have bell peppers, cucumber and carrot.
-Skip adding coriander if u don't have
Classic hummus
Hummus is something which you must keep ready in your refrigerator in times like these. Comes in handy for so many recipes. You can smear it on toast for breakfast or make Grilled vegetable wraps which you'll see next on scrolling down. Its great for snack and can be used as a dip with raw vegetables like carrots, cucumbers, cherry tomatoes, khakhara. Hummus is made with all of basic ingredients like chickpeas, olive oil, cumin powder, garlic, chilli powder and lemon.
Alterations:
Omit olive oil if you don't have.
These wraps or soft tacos will bring a smile on your face in this time of self quarantine. You can sautee/roast/grill whichever vegetables you have with you. These wraps are healthy, filling and super delicious. Great for feeding all of your family members as you can make a big batch of hummus and use it for 2 days.
Alterations which can be done:
Substitute bell peppers and mushroom with chopped onion, cauliflower, carrot, capsicum, broccoli, french beans.
Egg-less Double Chocolate banana bread
Eggless and moist Double Chocolate Banana bread. A must try if you love chocolate. It's something your kids will love to bake with you and will relish it so much. It's fudge-y, chocolaty and so good! Made with simple ingredients like flour, butter, banana, cocoa powder and dark chocolate. It's really very moreish and indulgent.
Alterations:
- Can skip cocoa powder and add just chopped chocolate or vice versa
- Can skip chocolate essence and add vanilla essence or skip that too.
Pad Thai- Thai stir-fried noodle dish
Pad Thai is a stir-fried rice noodle dish which is quick, easy and packed with tons of flavor. This hearty and filling dish is spicy, sour, sweet and salty.
Ingredients which can be omitted or substituted:
-Use any other veggies like broccoli, baby-corn, thin strips of bell peppers instead of carrots and beans or leave our veggies altogether.
-Substitute peanuts with roasted cashews
Egg-less whole wheat banana cake
Incase you are missing sweet treats which you like to buy from your fav bakery, here's sharing delicious yet incredibly healthy whole wheat banana cake recipe which is so so moreish. I like to swirl in some nutella just before baking but you can skip it if you want.
Alterations:
-Can use regular cooking oil if you don't have olive oil.
This Indian curry made with chickpeas is extremely flavorful and uses tomatoes and Indian spices which you will easily find in your pantry. Great for batch cooking and pairs really well both with chapatis and rice. It tastes great even with toasted bread.

This Rajma masala is one of all time fav recipe and I have literally grown up eating it. I would really look forward to lunch whenever Rajma was made at home. I personally love it with rice but goes well with chapatis too. Made with all staple ingredients like kidney beans, garlic, onion and tomato, it's a great lunch/dinner option.
