Classic or chocolate, give me pancakes for breakfast and my day is made. Pancakes are usually made with flour and eggs but I like making them egg-less using whole wheat flour and they turn out as delicious as the ones made with flour.

And bonus is that they are made with mix of whole wheat flour and oat flour. Amazing right?

Amazing and egg-less Apple Pie Whole wheat Pancakes - fluffy, delicious, healthy!

Serving: Makes about 4 pancakes
Ingredients
3/4th cup whole wheat flour
1/4th cup rolled oats or instant oats
1/4th cup yogurt
2 tsp sugar
3/4th cup water
1/4th tsp cinnamon powder
1+1/2 tsp eno/fruit salt
2 tsp butter for making pancakes
Apple topping
1/2 apple- thinly sliced (skin on)
2 tsp butter
2 tsp honey
1 tsp sugar
1/4th tsp cinnamon powder
1/4th cup water or more if required.
Method
For pancake batter, combine whole wheat flour, oats, sugar and cinnamon powder together in a medium bowl.
Now add yogurt,water in dry ingredients and make a smooth batter. (Batter will be fairly thick but keep it that way coz fruit salt/Eno will make the batter light and thin).
Pre-heat non-stick pan/griddle and brush lightly with oil/butter.
Just before making the pancakes, add fruit salt in the batter and give a good mix.
Prepare pancakes by dividing the batter into 4 pancakes. Cook till the surface dries out and you can see bubbles, then brush the surface lightly with butter. Now flip and cook the opposite side till golden brown.
For apple topping, melt butter,sugar and honey in a medium sauce pan.
Add apples, water and cinnamon powder.
Cook apples over medium heat till they are slightly softened and the syrup in the pan becomes slightly thick. Turn off gas and keep apple topping aside. (Add more water if you like ore syrup)
Serve pancakes with the apple topping and syrup.
