Stir Fried Mushrooms ( Chinese Style)




Mushrooms happen to be one of my favorite vegetable because they have this sweet earthiness. Once cooked, they taste delicious and succulent. It has a very distinctive flavor which can be brought about by adding just little butter or olive oil. You can use mushrooms in sandwich filling, pizza, pasta,soups,stir-fry. 


Mushrooms particularly increase the strength of your immune system. It also helps in weight loss, fights against cancer and reduces cholesterol levels. Mushroom is one of the few vegetable which has Vitamin D which helps in absorption of calcium and phosphorous in bones. Its an ideal low energy diet for diabetics( they have no fat, no cholesterol).


Mushrooms hardly take 5 mins to cook( almost effortless).


Stir-fry is a popular method in China which is quick and preserves natural crunch in vegetables. I have used spring onions, babycorn and spinach in this recipe.You can add any other vegetable too or not add any other vegetable at all. Dissolve 1 tsp of cornflour in water and add if you wish to have semi-thick gravy to go with rice!




INGREDIENTS (Serves 2)


  • 1 packet of button mushrooms- cut into halves
  • 1/2 spring onions- chopped fine
  • 1/2 cup babycorn- diagonally cut
  • 20-25 leaves spinach
  • 1 tbsp oil
  • 2 tbsp soya sauce
  • 2 cloves of garlic-finely chopped
  • 1 tsp sesame seeds
  • salt to taste
  • 1/4 tsp red chilli powder







METHOD


Step 1

  • Heat oil in a wok/pan , add garlic and saute for 2 minutes.
  • Now add spring onions and saute for further 2 minutes.




Step 2


      Stir in babycorn, cover with a lid and cook for about 5 minutes on low heat.




Step 3


Now add mushrooms, spinach leaves, soy sauce, salt, sesame seeds, red chili powder and give a good stir. Cook till spinach leaves wilt away  and mushrooms melt down little and ooze out water.




Step 4


        Sprinkle sesame seeds and serve hot!!!
