Chia brekkie bowl with fresh seasonal fruits


It's been a while since I shared any recipe. This has obviously been a very long pause from blogging. All those who are wondering if I have stopped blogging, I have not. Manish and I have been blessed with a beautiful baby girl. We have named her Hridanshi(part of our heart). Our lives have been pretty much about her since the time she has been born. Between changing diapers,feeding her and putting her to sleep, I haven't been able to find time to hold camera in my hand.




I honestly don't know when my day starts and when it ends! I might be little inconsistent with my posts in the beginning but will try to post as often as possible.

So, coming back to this post. Being an Indian, you tend to eat a lot of ghee laden food during your resting period after delivery. Since I have just started to make an effort to loose weight, this chia bowl is a fab and healthy start to the day. It comes together easily and has my favourite seasonal fruits- strawberries and figs. If you know me, you also know how much I love strawberries and mangoes. Considering strawberries are in season right now, I had to share this easy breakfast recipe. This recipe is amazing for working people too coz it gets ready in minutes,hardly requires any preparation.

Ingredients

1 cup coconut milk
pinch of cinnamon
2 Tsp maple syrup ( use honey if not vegan)
2 Tbsp chia seeds
4-5 strawberries(pureed)
7-8 sliced strawberries
1 sliced banana
2-3 sliced figs
1/4th cup pomegranate kernels

Method

Mix honey and cinnamon in coconut milk.

Soak chia seeds in coconut milk overnight and refrigerate.

Next day morning before breakfast, puree 4-5 strawberries in a blender and mix through in chia pudding with a spoon.

Taken pudding out of fridge and thin down with little water if required.

Pour pudding in a serving bowl.

Garnish with sliced strawberries,banana,pomegranate and fresh figs and serve.

Notes:

You can add other fruits like pineapple,kiwi,apple,papaya,grapes and oranges too.

Throw in some dried fruits like almonds,raisins,pistachios and walnuts for added benefit.
