Eggless Strawberry and almond meal cake with orange glaze and more strawberries

Coming back to this cake,its been a while since I shared recipe of a cake. That is because most of the birthdays and anniversarys, my Dark chocolate cake with chocolate ganache sits atop the table. It is so moist, chocolaty and decadent! Its my family's favourite-both Parents and In-laws side!



Its almost Christmas and if you are looking for a new recipe of cake to bake for your family and friends then you must try this fresh and fruity cake made with bright red strawberries and seasonal oranges.




This Strawberry and almond meal cake is eggless,moist,buttery and just melts in mouth. Strawberries make this cake super moist and orange juice lends citrusy freshness throughout. Ground almonds enhance the taste and gives this rich cake crumbly texture. Icing is done with simple orange glaze which is made by mixing icing sugar and orange juice together. I love how it drizzles down the edges and then sets on its own making this cake even more delish!




This cake is a perfect example of how cakes do not have to be extravagant and time consuming. A good cake can be made in the simplest of way using basic ingredients. Its an ideal cake to enjoy with your evening tea/coffee or making for Christmas celebrations. With strawberries in season, its a perfect time to make this simple and delicious cake.

Ingredients

125 gms flour
1/2 cup ground almonds
1+1/2 tsp baking powder
1/2 Tsp baking soda
2 Tbsp icing sugar
1 Tsp vanilla essence
5 Tbsp semi soft butter
1/2 tin milkmaid
1/4th cup orange juice
sliced strawberries

Orange syrup to moisten the cake
1 Tbsp sugar
juice of 1 orange

Orange glaze
3/4th cup icing sugar
1 Tbsp orange juice

Method

Preheat oven to 180 degrees Celsius for 10 minutes

Grease and dust a spring form cake mould.

Strain flour,baking soda, baking soda and icing sugar together. Then add ground almonds and mix through.

Pour milkmaid into a bowl and cream it with an electric beater. Once milkmaid is aerated, add butter and beat further till mixture is fluffy and light in colour.

Slowly combine dry ingredients in batter in three equal parts along with orange juice. Add vanilla essence while adding the last part.

Pour batter in the greased cake mould, flatten it out by tapping on kitchen counter.

Arrange sliced strawberries over the batter and press lightly.

Cover with an aluminium foil and bake in a preheated oven at 175 degrees for 30-40 minutes or till its cooked through.

Once cake has cooled for 10 minutes, release from cake mould.

Make orange syrup by heating orange juice and sugar together for 5 minutes.

Drizzle it lightly over the cake especially the edges.(Don't drizzle too much)

Orange glaze

Mix icing sugar with 1 Tbsp orange juice and dissolve properly. 

Drizzle icing over the cake once cake has come to room temperature.

Decorate with sliced strawberries and serve with hot cup of black coffee.

Notes:

Strawberries might sink to the bottom but that is alright.

Fruit based cakes take time to bake. Its better to cover the mould with foil and bake at low temperature like 160 degrees for longer time.

Don't keep opening the oven. Check after 30 minutes by touching lightly with your finger.

This is a moist cake on its own so drizzle orange syrup very lightly.
