I love eating pasta, its the ultimate comfort food for me. Cooked al dente, accompanied with veggies and tossed in basic marinara or pesto, its a hearty meal which tastes divine. A good pasta dish doesn't need too many ingredients. That's the beauty of Italian food, simple yet delicious and bursting with flavours. Good quality olive oil,tomatoes,salt and pepper are enough to do the magic.
If you ask me, I can just live on pasta and have it in the form of Penne in Arabbiata, Gnocchi in Marinara sauce, Pesto pasta, Spaghetti in marinara, pasta in alfrdeo sauce or tossed in just some extra virgin olive oil, garlic and parsley. This pasta salad is my favourite and it comes together in minutes. Its bursting with flavour of cherry tomatoes and balsamic vinegar. So delicious!
This salad is made with balsamic vinegar dressing. Balsamic vinegar hales from Italy and has a sweet and sour fruity flavour. Its a vinegar which is made from grape juice. Balsamic vinegar when reduced becomes thick which is great over ice-creams and desserts. Sweet and sour taste elevates desserts and take them to a different level altogether. It goes exceptionally well with strawberries, peach, cherries and soft cheese like goats cheese, feta and ricotta.
This pasta salad has a light tomato sauce which is made by squeezing some of the tomatoes which release juice and offer subtle flavour of tomato.
Cold pasta salad with a light raw tomato sauce and balsamic vinegar dressing.

Ingredients
1 cup raw pasta
10-12 halved cherry tomatoes
1/2 cup lightly boiled sweetcorn kernels
2 Tbsp Extra virgin olive oil
1 Tbsp balsamic vinegar
salt to taste
1/4 th tsp black pepper powder
1 Tsp honey
few basil leaves
Method
Boil pasta in hot salted water till al dente. Strain and keep aside.
Take a small air-tight jar and add olive oil,balsamic vinegar, honey, salt and pepper. Cover with lid and shake to make dressing.
Take a salad bowl and add cherry tomatoes. Squeeze some of halved cherry tomatoes.
Then add pasta, boiled corn and fresh basil. Pour the dressing over salad and give a good mix.
Refrigerate for half hour and serve cold.
