Lebanese grilled vegetable Tacos with Hummus


Forgive me if my chapatis/ whole wheat tortilla don't look all that great. I am yet to perfect the art of making Indian chapatis!!

Off-late I have been hooked to these tacos/ wraps. These are so simple to make and so so delicious! I cannot thank my bhabhi Meenu enough for introducing me to Hummus. There is not one single person I know who has not gotten smitten by my hummus recipe. It really is a wonder sauce. Smear it over toasted bread,wraps or dip your favorite finger food in it. It is to die for!

Tacos are traditionally Mexican. It is a corn/wheat flour tortilla to which fillings like Mexican beans,vegetables, sea-food, meat is added and topped with garnishes like guacamole and salsa. Tortilla is nothing but a fancy word for 'Indian chapati'. Next time you are bored of roti-sabzi like me, do try these grilled vegetable tacos.



Lebanese cuisine celebrates whole grains, chickpeas, spices and uses generous amount of lemon, garlic and olive oil. My favourites are hummus, tabbouleh and falafel tucked in pita .Two spices which dominates Lebanese kitchen are cumin and zaatar. While I am yet to learn how to make zaatar, I am quite familiar with cumin as it is used every single day in Indian households.

Simple, healthy and flavourful Lebanese grilled vegetable tacos topped with addictive hummus.

Makes 2 Tacos

Ingredients

8 button mushrooms- sliced
1/2 red bell pepper- diced
1/2 yellow bell pepper - diced
1 Tbsp Olive oil
1/2 Tsp red chili powder
1/2 Tsp cumin powder
salt to taste

Salsa

1 finely chopped onion
2 Tbsp chopped coriander
salt
lemon

Assembling Tacos

Whole wheat chapati/ tacos
Hummus (Recipe here)


Method

Coat mushrooms and bell peppers with olive oil, salt, cumin and chili powder.

Spread in a baking tray and bake in oven at 200 degrees for about 10-12 minutes.

Meanwhile head on to make salsa by mixing chopped onion, coriander, salt and lemon together. Chill in refrigerator for 15 minutes.

Once vegetables are roasted, prepare Indian style chapatis. (You can alternatively use store-bought tortillas)

Spread grilled vegetables on chapatis/tortillas and top with chilled salsa.

Finally add a good dollop of hummus on vegetables. Wrap it up and relish!





TIPS

Rather than making chapati/tortilla on open flame, cook on griddle(tawa) and use a kitchen towel to inflate chapati/tortilla. This will help to get a good texture on chapati/tortillas.

Crisp up chapati/tortilla for a bit longer on griddle if you enjoy tacos with a bit of crunch.

You can grill other veggies like broccoli, carrot, baby-corn and zucchini too.

Like hummus, other dip/sauce could be thick garlicky yoghurt , guacamole and mustard!


Kids can be fussy about food. Tacos are excellent when you want to give a wholesome meal to kids. Grate some cheese inside the wrap and your kids won't even notice the veggies.
